Job Description:

The Catering Chef reports to the Director of prepared foods and works hand in hand with the Catering Coordinator to oversee the catering operation of Plum Market. They are responsible for catered events, special events and managing corporate clients of any size. They will be able to provide exceptional food and model exceptional client service. They will supervise Team Members to execute at the highest level.

Qualifications:

Ability to provide exceptional client service.

Must have a love of natural, organic and specialty food.

Must be a Passionate Chef, with creative ideas.

Must have a strong understanding of catering operations and the ability to write inspired catering menus.

Must have a minimum of two years managerial experience.

Ability to lead by example and set clear expectations.

Able to oversee and train in all areas of kitchen management including proper rotation, labeling, and food safety and sanitation.

Must have strong organizational skills and the ability to meet deadlines.

Excellent written and verbal communication skills

Ability to work a variety of shifts including nights, weekends and Holidays.

Responsibilities:

Model and provide exceptional guest service.

Work with the Catering Coordinator to develop and continuously update a catering business plan.

Oversee the prepared foods Team Leaders who leads the store team, oversees the scheduling, production, and catering.

Oversee production of catering and events, corporate events and all menus pertaining to catering.

Develop BOH production sheets and production schedule for events.

Aid in generating special events menu, catering menus, holiday catering menus, and custom menus with the Director and Catering Coordinator.

Writes menu for with Director for CRU wine event.

Aids in pricing, quality control, and logistics of events with the Director and the Catering Coordinator.

Creatively incorporate extra/additional products from events into Penske menu and the store's prepared foods sub-departments.

Works with the buyer to on finding menu products, quantities and securing orders.

Works with The Store Leader to provide actual budgeting requirements and needs for the event.

Evaluates BEO to make sure pertinent information regarding menus, quantities, pricing, timing, and departure time is accurate.

Helps secure BOH team for off premise events.

Effectively resolve client issues.

Meet deadlines in regards to menu development and event preparation.

Ensure that all equipment owned by Plum Market or rented is organized cleaned, maintained, properly stored, accounted for as it leaves and returns to Plum or rental company.

Perform the final check of items against all BEO leaving the building for catering orders, pick up orders, or off premise catering orders.

Helps update Caterease with accurate menu items, pricing, quantities, yields, specs, and descriptions.

Make sure all BEO are distributed to proper teams, team members, with accurate info following BEO S.O.P. & hung in proper boards in catering office. As well as following up with teams to confirm they have and understand the BEO.

Assist the catering coordinator with planning event set up; break down, drivers, layouts, flows, clean up, designating captains and holding them accountable of events on or off premise & tastings.

Must stay knowledgeable on delivery schedule from our purveyors to communicate to client and TM items that need to be purchased for filling orders.

Effectively communicate with Clients, Team Members and Store Leadership.

Write and administer performance reviews.

Prepare and administer disciplinary action including discussion notes and written disciplinary action.

Thorough knowledge of all relevant Plum Market policies and standards.

Stand and walk for up to 4 hours without a break.

Ability to bend and stoop to grasp objects, climb ladders, lift loads, up to 50 lbs. unassisted, push and pull carts weighing up to 100 lbs. unassisted.
