POSITION DESCRIPTION:
We are looking for a experienced "Hands On" Sous or Executive Sous Chef candidate with previous high volume restaurant, hotel and /or country club experience. This is a great opportunity for the right candidate. This position is responsible for overseeing kitchen operations at one of Dallas's Top Rated Golf Clubs. Ideal candidate will be responsible for management of all culinary operations on a daily basis, product presentation, accountability for all areas of controllable expenses, execution of quality service and food, maintaining a safe and secure work environment, maintaining all culinary equipment, managing BOH labor, managing food cost, estimating food consumption daily and requisition or purchasing food accordingly, establish production levels and inventory controls, scheduling, training of all hourly employees, compliance to food safety and sanitation requirements related to the preparation and service of food and beverage, execution of all menu items and banquet menu which include timing, quality, temperature, portion, recipe adherence, presentation and execute all events/banquets to company standards, expectations, and specifications. You must have in-depth skills and knowledge of all kitchen operations. You must be able to produce on a daily basis, a consistent product to our guests and exceed guest's needs in a timely manner. Proven excellent supervisory verbal and written skills are essential. You must have a passion for food; have a proven track record as a leader along with managing your team with enthusiasm and a high level of energy. You must have the skill, ability and experience to plan, organize, staff, and execute banquets from 20 to 350 guests, from buffets to plated dinners. Ideal candidate is one who is a self starter, self driven, self motivated, has excellent interpersonal communication skills, has a sense of urgency, exhibits leadership by example, has a positive image, one who is very highly organized and detail orientated, one who can hold employees accountable to set standards and expectations, and again a "Hands On Working" Chef. POSITION REQUIREMENTS:
Minimum 5 years of hands on, high volume cooking, kitchen management, Chef, or Sous Chef experience in a upscale casual full service restaurant or Country/Golf Club
Strong knowledge of food service management, including procurement, preparation, and service of food and beverage.
Must have knowledge of effectively managing food and labor costs.
Must be proficient in completing monthly food inventory.
Must understand and manage the daily "FOOD FLOW"
Must exhibit and manage high standards in food safety and sanitation habits in the kitchen daily
Experience to run a kitchen to 100% compliance of all state, local and federal health department regulations
Proven success in event menu planning for Banquets, Tournaments and Events
Must have experience with volume banquet production with different types of cuisine
Strong organizational and time management skills
Must be able to stand for extended periods of time and lift up to 50 pounds.
Must be proficient in the use of PC software tools, especially, work, excel and outlook for reports, analysis, audits, and email communication.
Effective interpersonal communication abilities
Able to work flexible hours including holidays and weekends.

DESIRED QUALIFICATIONS:
Interest and/or knowledge of Golf
Possess a culinary degree
Bilingual (English and Spanish)
